Tomatoes: Roma tomatoes, I love to remove the seed from the tomatoes but this is not a must especially if the tomato is still firm. I find not storing in the tomatoes in the fridge helps as well. Onions: I used red onions for this recipe, but the authentic recipe calls for white. Jalapeno Lime juice Salt Black pepper: Now this is highly debatable as it is not commonly used for this recipe but a pinch wouldn’t hurt. I just love the aroma of freshly ground black pepper. Cilantro this is what we call parsley here in the UK.

How To Make Easy Homemade Pico De Gallo Recipe

Chop the tomatoes, onion, jalapeno into small dice. Finely chop cilantro (parsley) to what you are comfortable with In a medium bowl, combine diced tomatoes, onions, jalapeno, parsley, lime juice, salt and pepper. Mix to combine, check for salt and lime and adjust to taste.  Leave to rest for about 10 to 20 minutes in the fridge or countertop covered before serving. You can use it immediately if you would be serving it with taco or seasoned chips

For the best Pico de gallo, make it on the day you need it to avoid the ingredients leeching excess water. Remember it is not salsa. That being said, it can last longer than a day but you might just need to drain off excess liquid when you need to serve it. Use fresh, ripe and firm tomatoes for this salsa recipe all the time. Leave the pico de gallo to rest for some few minutes before serving in other for it to build flavour.Adjust the recipe to suit your preference. I am not a fan of fresh parsley (cilantro) hence why I used a little quantity.
