Stovetop butter potatoes

This recipe is a perfect example of simple does it, fluffy boiled potatoes tossed in melted garlic butter garnished with fresh parsley and black pepper. This is so good, your picky eater will ask for more. Boiled potatoes with butter make a great side dish, and they’re just as good as these baked sweet potato slices. It is soft (melt-in-the-mouth) and tender yet buttery and flavorful thanks to the generous amount of garlic-infused butter. The garlic really adds an extra depth of flavor to this side dish and I guess that is what made it stand out. You will love this recipe because it is quick and easy, you may even choose to peel or not peel the potatoes if you prefer. It is versatile too and you can use any variety of potatoes you want.

Ingredients

Potatoes: any large all-rounder white potatoes will be great for this recipe, I used Maris piper. You can also use red potatoes for this recipe. Butter: this can be salted or unsalted. If using salted butter, you will need to adjust the salt you will add to the boiled potatoes. Garlic Parsley Salt and black pepper to taste

How to make stovetop buttered potatoes

Scrub and wash the potato clean, (peel if desired) and cut it into equal chunk sizes. Fill a large pot with cold water and place on medium-high heat, add salt to taste and stir to combine. Transfer the chopped potatoes into the cold water making sure it is fully submerged, bring the water to a rapid boil for about 5 minutes then reduce the heat to simmer for another 5 to 8 minutes until the potatoes are done and fork-tender. Drain the potatoes in a colander and set aside to cool slightly. Place the pan you used to boil the potatoes back on the stove, add butter and reduce the heat. Cook the butter until it is slightly brown, then add chopped garlic and saute for about 30 seconds or until fragrant. Keep an eye on it so it doesn’t burn. Return the boiled potatoes to the garlic-infused butter and carefully stir until the potatoes are well coated with the garlic butter sauce. Sprinkle some chopped parsley over the potatoes and stir to combine. Remove the pan from the stove. Transfer the butter potatoes to a serving dish, and leave for about 5-10 minutes for the flavor to infuse before serving. This dish is best served warm. Enjoy

How to store

This dish is best served fresh, however, if you do have leftovers, store it in an airtight container and store it in the fridge for up to 3-4 days. Reheat in the oven or microwave until hot to your liking.

What to serve it with

This butter potato can be served as a side dish to just about anything. I usually enjoy it with grilled or roasted chicken, steak, lamb chops, or firm fish (like salmon). You can also add some vegetables like peas, rainbow carrots, string beans, or broccoli to make it a complete meal.

How long to boil potatoes

The cooking time for boiled potatoes will depend on the size of the potato chunks. For smaller potato chunks, it will take about 5 minutes to come to a boil then another 5 to 10 minutes to cook until tender. For larger potato chunks, it may take longer than 10 minutes, start checking from 10 minutes for doneness. That said, for this recipe, the potatoes should be boiled until fork tender or however, you like it

Can this be made ahead

You can make this dish in advance and reheat it later, but I wouldn’t recommend making it too far ahead. Make it on the morning of the day you wish to serve it.

Is this boiled potato with butter healthy

Yes, it can be if eaten in moderation, this recipe is made with a reasonable amount of butter. You do not need to drown the spud in butter for it to be delicious and flavorful.
